Born in Buena Vista, Puebla, Mexico, Noel Baltazar developed a passion for authentic Mexican cooking at a young age, inspired by family traditions, homemade recipes, and the rich flavors of Puebla cuisine. Bringing years of hands-on restaurant experience and a modern vision for Mexican and Tex-Mex food, he created Aqui Es Puebla to share the taste of home with New York.

As a young entrepreneur, Noel combines traditional Mexican flavors with fresh ideas, quality ingredients, and a welcoming atmosphere where every customer feels like family. From handmade dishes to bold street-style flavors, his mission is to bring authentic Puebla-inspired food and culture to every plate.
